Parts of the Opel Manta A are still available today. The quantities became less as time went by.
Searching the Internet I found interesting things in the south of Europe. The most important thing is that parts are often a little cheaper than in the north.

Aftermarket wings for about 100 euros. In the north they can be twice as much.

It's of course the case with other car types as well. Manufacturing of parts and a lot of new old stock NOS can be found overthere.
Back in the day I found several cheap goods and brought them in in large quantities.

US Carparts in the Netherlands

In the dutch town of Pijnacker there is a guy who sells carparts for US cars.
From oldies of the late sixties until the present day.

Chevrolet Chevele,   Camaro.  Pontiac Firebird.  Ford Mustang, Dodge Ram, Dart to name but a few.

Used and new genuine parts are the name of the game.  He advertises with more than 120 different ads.

www.ebay.com has a lot of parts for the Opel Manta A at the moment.

Fenders or wings front and rear new and genuine. In Germany they call it a Kotflügel for the front ones and Seitenwand for the rear.
Prices are high of course. This month, may 2017, they (frontfenders) were sold for €399,-- a piece.

There are used parts as well.  Also original or genuine.

Mirrors are still available also new. Mirror in german is a spiegel. Use the search engine for:

You can add new (Neu) or used (gebraucht)

Then we have a rear panel (Heckblech) you know the one containing the taillights. Is there to be found. I found these particular parts on www.ebay.uk as well.
